INGRIDIENTS

  • 1 large Onion ( sliced)
  • 2 red scotch bonnet pepper
  • 1 cup fresh groundnuts(Skinless)
  • 4-5 garlic cloves
  • 3/4 cup Crayfish (ground)
  • 2 cups washed  bitter leaf
  • 1 teaspoon salt
  • 2cups water for blending

DIRECTIONS

  • Boil the peanuts for 10 minutes in a sauce pan.
  • Let it cool then peel the skin off
  • Blend the onion, garlic, scotch bonnet pepper and skinned peanuts into a fine paste using water to facilitate the blending
  • Transfer the blended mixture into a saucepan on medium heat then add the crayfish powder, stir in and let it simmer for 10 minutes
  • Add the bitter leaves, salt, Stir and simmer for 10 more minutes and your Ndolé is ready to serve.
