Heat the vegetable oil in a pan over medium heat, add the prawns, garlic, ginger, black pepper, soy sauce and stir fry for 2 minutes then add the onions, carrot and stir-fry.
Add the attieke, stir in then add the red and green bell peppers, salt and toss to mix evenly.
Prawns attieke stir-fry ready to serve. Serve with avocado and any sauce of your choice.
